Crunchy Spring Chicken Salad Pita

When a salad on its own is not enough, you can make it a satisfying meal with pita! This has all the best qualities of a salad - crunchy radishes and cucumbers, smooth and briny roasted red peppers, and a tartness from vinaigrette. Enjoy!


  • Rotisserie chicken

  • 1 jar roasted red peppers

  • 1 cup walnuts, roughly chopped

  • ½ lb mixed greens

  • 1 large fennel bulbs, thinly sliced

  • 1 cup radishes, thinly sliced

  • 2 pitas, halved


  • ¼ cup white wine vinegar

  • 2 tbsp honey

  • 1 tbsp Dijon mustard

  • ½ cup extra virgin olive oil


  1. Prepare the fennel, radishes, and roasted peppers, finely slicing them.

  2. Shred the rotisserie chicken, put in a bowl with all the vegetables and the walnuts.

  3. Mix dressing and toss salad. Place salad in the pita and enjoy!
