Spinach Artichoke Pita Grilled Cheese

Adapted from

3/4 cup fresh or frozen spinach, thawed, and squeezed of excess water

1 cup marinated jarred artichokes, chopped

1 cup shredded gouda or fontina cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated parmesan cheese

1 clove garlic, grated

1/4 cup fresh basil, chopped

red pepper flakes

4 small pitas

3 tablespoons salted butter

honey, for serving

1. In a bowl, combine the spinach, artichokes, mozzarella, gouda, parmesan, garlic, basil, and a pinch each of red pepper flakes, salt, and pepper.

2. Cut open one side of the pita, creating a small opening. Stuff the cheese mixture evenly between each pita.

3. Butter the outside of each pita.

4. Heat a large skillet over medium heat. Place the pita, one at a time, in the skillet and cook until golden on each side, about 3-4 minutes per side. Optional toppings: honey, chili flakes, and sea salt. Enjoy!
